Vinification

Grown in the ancient villages of Negrar and Fumane Valpolicella, these grapes are traditionally harvested by hand in early October and are left to dry until early February.

What follows is 40 days of maceration and 30 days of fermentation before wine is placed in vats for one year. Having reached its apex, wine is then transferred into small wooden barrels for 18 months, which helps to refine and exalt its specific character. Subsequently, it is bottled and kept standing for three months in our cellar before being sold.

Taste

Dark colored wine, intense red with violet reflections. Jammy fruit aromas and spices. The palate is powerful, but the tannins are soft, followed by a fresh acidity that reveals notes of plums and cocoa on its long, persistent finish.

Cocktails and pairings

Filet mignon garnished with parmesan, red deer in a black tea sauce, dark chocolate.
Serve at 17°C. Pour into a decanter two hours before serving.
